JOSÉ PADILLA SPEAKS SLOWLY, the way he programmes his records. We met at the bar of Café del Mar in late summer 2007, in the hour before sunset when even the regulars stop talking. "People always want a definition for Balearic," he said, sipping water. "But it's not a sound. It's a place, and it's a time. A record that's wrong at midnight is right at six in the evening.
